Chicken Waldorf Salad

4 chicken breasts- cooked and shredded

1/2 c. walnuts

1/8 c. minced onions

1/4 c. chopped celery

1/2 c. grated cheddar cheese

1 red apple- peeled, seeded and diced

1 cluster of grapes (I've always used the seedless green ones)

1 tsp. minced garlic

1-1/2 tsp. coarse ground pepper- (We like a LOT of pepper, so you can gage this ingredient according to your own tastes.

2 tbsn. dill pickle relish

salt- (optional- I never use it in this)

Mammaw's Dressing:

2-1/2 c. miracle whip
1 tbsn. sugar
1/4 c. milk
*********************************************

This is great as a filling for sandwiches using plain white, wheat or sourdough bread, but I LOVE it on wheat crackers or Triscuits!

ZUCCHINI PARMESAN

4 c. thinly sliced zucchini
1 tbsp. water
1 tsp. salt
3 tbsp. grated parmesan cheese
1 sm. onion, chopped
2 tbsp. margarine
Freshly ground pepper

Put all ingredients except cheese in skillet. Cover and cook 1 minute. Uncover and continue cooking and turning with wide spatula until just tender. About 5 minutes. Sprinkle with cheese. Toss. Serves 6 to 8.

Spinach Manicotti

You will need
- 1 package (10 oz) spinach
- 2 cups ricotta cheese
- 1 1/2 cups grated mozzarella cheese
- 3/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 1 egg
- 1 teaspoon parsley
- 1 clove garlic, minced
- 1/2 teaspoon Black pepper
- 2 jars (28 oz. each) spaghetti sauce
- 1 1/2 cups water
- 1 package manicotti shells


Directions:

Wash spinach and drain well. Cook in a pot with the water clinging to the leaves, just until tender and wilted. Drain and squeeze out any remaining water. Chop. Combine in a large bowl with the ricotta cheese, 1 cup of the mozzarella cheese, 1/4 cup of the Parmesan cheese, onion, egg, parsley, garlic, and pepper.

Combine spaghetti sauce and water. Pour 1 cup of the sauce in the bottom of a 9 x 13 inch pan.

Stuff uncooked manicotti shells with the cheese mixture. Place over the sauce in the pan. Pour the remaining sauce over, and top with the remaining mozzarella cheese and Parmesan cheese.

Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before putting in the oven.

Bake, uncovered, at 350 degrees F. for 40 to 50 minutes. Makes 8 servings.
